This delicious dried-fruit free muesli bar arrives courtesy of my friend Liz Sefton, at The Nourishing Home
INGREDIENTS:
1 1/2 cups of nuts of choice
1/2 cup coconut flakes
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/4 cup sesame seeds
1/4 cup chia seeds
1 tsp vanilla powder or extract
1 tsp cinnamon
1 tsp salt
Zest and juice of one orange
3 tbsp melted coconut oil
2 tbsp nut butter
1/4 cup of rice malt syrup
METHOD:
Blitz or roughly chop the nuts, add seeds and stir through remaining ingredients.
Add enough rice malt syrup or sweetener of choice to ensure it will stick together!
Press in a baking tray or muesli bar mould tray and bake in a moderate oven until golden.
