Serves 6-8
Ingredients:
250g kale leaves, washed and finely chopped
4 spring onions, sliced
1 bunch parsley, chopped
1 bunch mint, chopped
1tbs ginger, grated
2 handfuls baby spinach
2 oranges, peeled and chopped
1 lemon, juice and rind
1 tsp black pepper
1/2 tsp turmeric ground
1 clove garlic, minced
2 tbs goji berries
2 tbs cold pressed EVOO or Flaxseed oil
2 tbs pumpkin seeds
2tbs sunflower seeds
Method:
- place kale in a large mixing bowl
- add pepper, lemon juice and rind, oil, garlic, ginger and turmeric
- rub into kale leaves until the kale has softened
- add remaining ingredients and serve
