PostCranberry Cookies

Gluten Free. Dairy Free. Freezable. Indulgent.

 

Ingredients:

3/4 cup of chopped walnuts

1 cup of almond meal

1/4 cup dried cranberries

1 cup desiccated coconut

1/4 cup flaxseeds

2tbs honey or maple syrup

1/4 cup coconut oil

1/2tsp bicarb soda mixed into 1tbs water

 

Method:

  • Combine all ingredients well
  • Shape into small cookies and place on a tray lined with baking paper
  • Bake for 10mins 180C or until lightly browned
  • They will be a tad squishy until completely cooled
