This little beauty is from the super simple and nourishing Changing Habits Cookbook. It’s my go to when I know we have been a little naughty and that the week ahead looks hectic. It makes lots of immune boosting goodness.
INGREDIENTS:
1 organic whole chicken
2 large onions, diced
2 celery sticks and leaves, chopped
6 garlic cloves, crushed
6 sprigs of fresh thyme
1 tsp black pepper
1/2 leek, chopped
2 spring onions, chopped
Salt and dulse flakes
1/2 tbs apple cider vinegar
3 bay leaves
1 tbs coconut oil
Approx 2l water (enough to just cover the chicken)
Juice of 1/2 lemon to serve
- Melt coconut in frypan and brown the whole chicken all over
- Place chicken in slow cooker with remaining ingredients
- Cook on low heat for 5-6hrs
- Remove the chicken from the cooker and remove bones
- Add the chicken meat back to the cooker
- You can allow to cool and remove fat layer off the top
- Ladel into bowls and squeeze lemon juice and salt/pepper to taste
