PostBread with cashews

INGREDIENTS:

1 & 3/4 cups cashews

5 eggs

1 tsp rapadura honey

3/4 tsp baking soda

pinch sale (with a pinch on dulse flakes for added iodine)

1 tbs apple cider vinegar

 

METHOD:

  • Preheat oven 180 degC
  • Process cashews into butter consistency
  • Add eggs and process until smooth
  • Mix in apple cider vinegar, sugar, salt and baking soda
  • Pour into lined loaf tin and bake for 40-50 minutes (or until cooked through)
  • Allow to cool in tin before removing
