Of course this is an indulgent treat, so be sure to enjoy in moderation!
BASE:
1 cup cashews
1 cup desiccated coconut
1 cup pitted dates
pinch salt
1tbs lemon juice
- blend all base ingredients until it is sticky. Add 1tbs water slowly if it needs a little more stick.
- Squish down into a baking paper lined tray and place in the freezer
ICING:
1/2 cup cashews
1/4 cup coconut oil
1/4 cup rice malt syrup
1 1/2 tbs lemon rind
2 tbs lemon juice
1/2 tsp vanilla extract
- Blend all icing ingredients until smooth
- Spread over the base and freeze until firm
- Enjoy! xx
