PostChicken Tacos (without tacos!)

Ingredients:

2 tbs tamari sauce (or coconut aminos sauce)

2 tbs rice malt syrup (or honey)

2 tbs coconut oil

500g chicken breasts, cut into 2cm pieces

Sea salt & pepper

4 cloves garlic

2 tbs ginger, grated

8 spring onions, trimmed and sliced

1/2 cup cashews, unsalted

12 cos lettuce leaves

 

Method:

Combine the sauces and syrup in a bowl

Heat oil in a frypan over medium to high heat

Season chicken with salt and pepper and cook through

Lower heat and stir in ginger and garlic

Add spring onions and cook for 1 minute

Stir in sauce mixture and cashews

Divide between the 12 lettuce leaves and serve immediately
