PostKale Burgers

Makes 4 large or 8 small burgers which are great for lunch boxes or for work lunches alongside a salad.

INGREDIENTSkale burgers

1 cup red lentils

2 cloves garlic

1 tsp chilli (omit for children)

1 tsp cumin

1/2 tsp coriander

1/2 tsp basil, thyme or oregano

1/4 tsp cayenne pepper (omit for children)

1 large sweet potato, mashed

2 cups of kale, finely chopped or processed

1 egg

salt and pepper to taste

 

METHOD

  • Preheat oven to 180degC
  • Cook lentils according to packet
  • Meanwhile chop or process kale and cook
  • Mix kale and cooked and drained lentils in a bowl
  • Add mashed sweet potato, garlic, spices, egg and mix until well combined
  • Form patties and place onto baking paper and bake for 30mins, flipping halfway
