PostGluten Free Zucchini + Bacon Slice

This versatile slice is quick to make and is gluten free and nut free.  It is fabulous for lunch boxes and can be frozen for any evening or lunch meal where you are short of time or a great balanced snack.

Ingredients

5 eggsZucchini slice

1 cup rice flour

2 large zucchinis, grated

1/2 brown onion, diced

1/2 cup olive or macadamia oil

2 bacon rashes, chopped

3/4 cup grated cheese

handful parsley, chopped

handful basil, chopped

1/4 cup chia seeds (optional)

salt + pepper

 

Method

  • Mix all ingredients
  • Pour into a lined baking tray
  • Bake 150C for 50 mins
